Abstract: Macao is a city for gourmets. The local traditional Portuguese cuisine preserves the original cooking techniques and flavors and has the potential to be a unique tourist attraction in Macao. However, past studies show little quantity analysis on the traditional Portuguese cuisine, and local authorities have failed to become aware of its development and problems. This paper considers the frequency of consumption of Portuguese cuisine and concentrates on evaluating the current development of Portuguese snacks through analyzing visitors’ consumption experience. IPA analysis is utilized to prioritize the improvement areas with an insight into promoting cultural characteristics and developing sustainable tourism in Macao.
