Abstract:
The objective of this study is to prepare a diet orange juice formulation with stevia, as a sugar substitute. The orange juice was prepared with 0.2853 grams of stevia in a liter of juice. The physicochemical properties of the juice such as, pH, acidity and ash were measured and pass the standard. In microbial testing the growth of acid resistant bacteria, lactic acid bacteria, fungi and yeast was investigated. The results revealed no growth of the above microorganisms. The diet orange juice ,containing stevia, was compared to Mimas orange juice(a sugar containing juice) in terms of color, flavor, taste, texture and sweetness by a questionaire. 35 individuals participated in this panel test. The results were analyzed by SPSS16, and the conclusion was that there was no significant difference between the stevia containing orange juice and Mimas orange juice with significance level of 0.05.
