Abstract: This study aims to examine and explore the role of innovation in the process of opportunity identification and exploitation by entrepreneurs in the Thai food industry. Specifically, the linkages and differences in innovative propensity among various SMEs and large-scale entrepreneurial actors within the value chains of rice and tropical fruit will be investigated. A systematic literature review revealed the popularity of quantitative studies in this area focused on hi-tech industries, particularly in developed countries. This has left considerable research gaps in terms of qualitative and more in-depth studies in the agriculture and food processing context. A critical realist philosophy underpins the research to be completed. The data will be collected by qualitative methods, primarily semi-structured in-depth interviews with both entrepreneurs and industry experts.
