Abstract: Today most researchers agree in that gastronomy represents one of the main activities for most tourists when abroad, and it is argued (and mostly accepted) that in fact tourists tend to give more and more importance to this part of their trips. Thus, tourists do not eat just for subsistence purposes anymore, and instead, they enjoy gastronomy as a very important part of the experience during their vacation. The purpose of this paper is to demonstrate that the concepts of tourism and gastronomy have been strongly intertwined in the past decades in the academy. By means of a quantitative-qualitative mixed-method, we identified publications in first-quartile Elsevier academic journals, in order to analyze the evolution of publications. In conclusion, we argue that this relation has increased in quantity of publications and in the richness of the different perspectives adopted by researchers. The geographical distribution is rather concentrated mostly among English-speaking countries, and there is a slight move from qualitative methods (mostly using interviews) towards quantitative (primarly using surveys with questionnaires).
